Jose Duarte, a Peruvian-born but long-time Chelsea resident, combines his stellar culinary and hospitality talents at Tambo 22. He honed those skills at his former restaurant Taranta in Boston’s historic North End. For his latest endeavor, he’s teamed up with Chelsea native Taylor Corcoran and her husband, Brian, to create the Peruvian-inspired hot-spot, Tambo 22.
From its inviting, rustic exterior to its umbrella-covered, colorful patio with the kinds of music that makes you want to dance, Tambo 22 is a sensory trip to the Andes. Spicy essences of Ajaimarillo, Rocoto, and Panca peppers boldly season Duarte’s modern Peruvian dishes. With an eye to climate sustainability, Tambo 22 supports local seafood vendors and uses only grass-fed meats. Duarte pairs them with imported ingredients from Peru, including chiles, quinoa, and beans.
Among the menu highlights are Ceviche de Tarwi. In this dish Duarte treats Andean lupini beans like seafood with a tangy lime and onion marinade. The grilled Anticuchos de Paiche are skewers of mild, meaty white fish seasoned with Peruvian Panca pepper and cumin. Tambo 22’s Sunday special is Pan Con Chicharron. That dish features crackling, roasted pork belly skin and tender, juicy soft meat piled on a roll. It’s served with fried sweet potatoes and mint criolla.
